Avocado Stuffed Meatballs

 

Ingredients

1 lb ground beef, grass-fed
1 egg
4 Slices of bacon cooked and minced, reserve drippings in the pan it was cooked in
1/2 onion
1 tomato
1 small bell pepper or 1/2 large, stems removed and seeded
2 jalapeños stems removed and seeded (leave in seeds to make it extra spicy)
2 garlic cloves peeled
1 cup cilantro
1 tsp cumin
1 1/2 tsp sea salt or to taste
1 1/2 avocado

Directions

Place onion, tomato, pepper, jalapeño, garlic, cilantro and seasoning in a blender and blend till it makes a smooth salsa. In a sauce pan bring the salsa to a boil then reduce to medium and stir constantly for 10 minutes. Remove from heat and set aside.

Slice your avocado into 3/4″ cubes and set aside.

In a large mixing bowl, combine ground beef, bacon, 1/2 cup of the salsa, egg and half of the bacon drippings (leave the rest in the pan). Mix until well incorporated.

Portion out the meatballs with heaping tablespoonfulls (each will make about 1 1/2″ balls). Don’t worry about shaping them yet.

Now we start shaping the meatballs. Grab one spoonful of meat and shape around an avocado chunk. Gently toss back and forth in your palms until meatball is shaped and avocado is completely covered, repeat until all spoonfulls of meat are converted into beautiful meatballs.

Heat the pan with the remainder of the bacon drippings to med/high heat (if there is too much grease left you can mop some up with a paper towel). Place a few meatballs in the pan (don’t crowd it). Cook them evenly on all sides to seal in the avocado; this takes around 5-7 minutes, they will become firm. Be gentle and use tongs if you have them. Serve with remaining salsa and enjoy your creation!
